This flavorful, creamy dip is a great party treat, or a delicious indulgence when you're in the mood to pick.
1 tsp. olive oil
1 onion, diced finely
5 cloves garlic, minced
3 cups fresh spinach
1 can artichoke hearts, chopped
1 cup low-fat cottage cheese
1 cup fat-free Greek yogurt
1 tsp onion powder
1 tsp salt
Place a nonstick pan over medium low heat. Add the olive oil and onions. Cook, stirring occasionally, until the oil becomes hot and the onions are soft and translucent.
Throw in the garlic, spinach and artichoke hearts. Cook, stirring occasionally, until the spinach wilts and reduced.
Remove the mixture from the heat and allow it to come to room temperature.
In a food processor, add the cottage cheese and pulse until it's smooth. Add the Greek yogurt, onion powder and salt. Mix to combine.
Fold in the spinach and artichoke mixture, then chill your dip. Use low-carb chips, tortilla chips or raw vegetables for dippers.
