Greek Inspired Pizza Mini Muffins

Yields 24 muffins

Ingredients
2 tbsp. extra-virgin olive oil
2/3 cup finely chopped onion
2/3 cup finely chopped red bell pepper
1/3-cup whole wheat pastry flour
1/3-cup all-purpose flour
2 tsp. baking powder
1-1/2 tsp. chopped fresh oregano
1 tsp. sugar
¼ tsp. garlic powder
¼ tsp. salt
1/3 cup low-fat milk
1/3 cup crumbled feta cheese
1 large egg, well beaten
2 tbsp. tomato paste
2 tbsp. kalamata olives

Directions
1. Using a large pan, heat oil over medium heat. Add bell pepper and onion, sautéing about 5 minutes or until onion is soft and tender. Put mixture in a bowl to cool.
2. Lightly grease a mini-muffin pan, using oil or cooking spray. Preheat oven to 400 F.
3. Combine the following dry ingredients in a bowl: all-purpose flour, wheat flour, baking powder, garlic powder, sugar, salt, and oregano. Whisk until blended together.
4. Taking the bowl with the onion mixture, stir in the following: milk, egg, feta cheese, tomato paste, and olives. Now transfer over to the bowl of dry ingredients. Mix until just combined.
5. Fill the muffin cups approximately two-thirds full. Bake until lightly browned, about 13 to 15 minutes.
6. Muffins may be served warm or at room temperature.
